1 small onion, chopped

2 pounds crawfish tails

3 tablespoons mayonnaise


2 tablespoons Beazell’s Cajun Seasoning

1 tablespoons dill pickle relish

1 tablespoon sweet pickle relish.

Melt 1 block of butter in large skillet over medium heat. Once butter is melted, add onion and saute’ until almost clear.  Add the 2 pounds of crawfish tails and saute for about 20 minutes. Remove from heat, and let cool slightly.  Spoon all of this into a food processor.  Pulse a few times until crawfish are ground up. Pour this into a large mixing bowl. Add about 3 tablespoons of mayonnaise, a few squirts of mustard, about 2 tablespoons of Beazell’s Cajun Seasoning, or whatever seasoning you prefer. Add dill pickle relish and sweet pickle relish and mix well.
