2 medium cucumbers (seeded and chopped)
1 bunch parsley (leaves picked off not chopped)

1/2 small red onion, (chopped)
2 tablespoons cider vinegar
2 tablespoons lemon juice
4 tablespoons olive oil
Salt and pepper to taste
8 ounces Greek feta cheese crumbles (or diced if bought whole)
Mix all ingredients together except feta cheese. Leave at room temperature for at least 1 hour for flavors to marinate. Toss in the cheese just before serving and adjust seasoning if needed.
Serve as is or over a bed of your favorite salad greens.
