Carroll worked closely with his good friend and founder of Food Net, Marcelle Citron, and was chosen by her to be the first director of food net in 1963. He expressed a great love for movies, music and his computer. Carroll served as a Eucharistic Minister and a reader at Village du Lac in Lafayette for many years. Survivors include his brother, John Theriot of New Iberia; three sisters, Fabiola Theriot Albert of New Iberia, Anastasia Theriot Roan of Mississippi, and Genevieve Theriot Crochet of New Iberia; and his special friends, Carmen Roebuck, who cared for him for the last 25 years, and Marcelle Citron and Mary Ellen Citron; and a host of nieces and nephews.
